My favourite way of eating mince is very simple.

I buy a jumbo taco mix and make sure I have some mince, a lettuce, tomatoes and tasty cheese on hand.

I simply more or less follow the instructions on the side of the box.

ooops you want the recipe:

Saute onion, then add mince and brown, add packet taco seasoning and recommended quantity of water and simmer till thick.

Meanwhile shred lettuce, chop tomatoes and grate cheese, open sauce packet and put on a sectioned tray.

We usually have it DIY (do it yourself) and zap the shells in the microwave.

Into shell put mince,cheese,tomato, lettuce and sauce.

Mince for anything

I use this recipe for Shepherds Pie, mince on toast, spaghetti bolognaise, wraps.

Brown mince with chopped onion & fresh or tinned capsicum. Season with garlic salt, chicken stock, worsteshire sauce and anything else that you like. Throw in a can chopped (no added salt) tomatoes and simmer for 10mins. Serve however you like.

This is a family favourite - we call it Taco Macaroni.
Brown about 750 gr of mince in a little oil add a pkt of taco seasoning and a jar of salsa then let it simmer for about 20 minutes.
Prepare a pkt of Macaroni Cheese as per the directions.
Cook a couple of heads of broccoli cut into small flowerettes.

Assemble as follows: in a ovenproof dish put a layer of macaroni half the amount then all the prepared mince then place the cooked broccoli evenly over the mince then top with the remaining macaroni - top the macaroni with diced bacon and shredded cheese and bake in the oven until the cheese is melted and browned.

Enjoy with a salad.

Lasagna - everyone will want seconds

Ingredients: Mince (so long as your guests aren't vegetarian, in which case leave out the mince add more vegetables)
Lasagna sheets
Whatever veges you have in the fridge and larder – virtually any except lettuce
A jar of pasta sauce
White sauce made from low fat milk powder and corn flour
Tasty cheese
Pepper and salt

However Nutty wants specifics so she can cook it to perfection, and I’m sure it will taste even nicer than ours did last night. Here’s what I did (measurements roughly on what I used) - veges was what I had on hand including using up a packet of dried peas and corn left over from over trip

8 Lasagna sheets (soaked in warm water to soften)

500 gm Mince
1 large Onion - diced
Three large mushrooms – diced
1 jar Neapolitan pasta sauce, plus jar full water used to rinse jar
A pinch of Basil, sprinkle of granulated garlic and sprinkle of chili powder

Simmer together for around 15 minutes whilst preparing other veges, white sauce and lasagna dish

250 gms frozen broccoli and cauli mix, boil separately for 5 mins

1 carrot – diced
Two small handfuls dried peas and corn mix

Add carrot, peas and corn and simmer for a further 5 minutes or until sauce is thick

500 gms tasty cheese - grated

Cover the base of a large (family sized) lasagna ovenproof dish with soaked lasagna sheets. They can be easily torn to shape to fill in the gaps

Add the mince and vegetable mixture and spread evenly

Cover with the rest of the lasagna sheets

Spread cooked cauli broccoli over the top. Sprinkle with about ¼ of the grated cheese, a little pepper and a little All Purpose Seasoning (salt).

White sauce: 6 very heaped dessertspoons (why can’t we get tablespoons any more?) low fat milk powder and 2 very heaped dessertspoons corn flour and mix to a smooth paste with a little cold water in a saucepan or microwave suitable jug. Add four cups boiling water whilst stirring (can use a whisk if it goes lumpy). Bring to the boil stirring frequently.

Pour and spread white sauce over the top, cover with rest of grated cheese, another sprinkle of pepper and All Purpose seasoning

Brown on a high shelf in a hot oven (15 – 20 minutes or so, depending on your oven)

Serves four.

If there is only three for dinner, add a bit more cheese to the leftovers next day and make tasty jaffles for lunch

Get about 500g of mince, add a packet of dried onion soup mix. Make into rissoles and cook. Really yummy and good camping fare. If you really want to be energetic, serve with mash potatoes.

curry mince, fry onion garlic cellery and carrot till soft, how much? for 2 i usually do 2 sticks of cellery 1 medium carrot and 1 onion and 2 cloves of garlic, whatever you want, then add mince and brown i add worcestershire sauce and salt pepper and curry powder to taste then half a cabbage and put lid on pan or alfoil now cook till cabbage is wilted but still crunchy. you can eat it like that or top with mash potato and cheese and bake in oven. we have it both ways. and sometimes when mince is on special i make individual ones topped with mash, cheese and sliced tomato and put in freezer.have even put deb on and you wouldnt know it.

another recipe i do is stuffed capsicums and can be done the day before, i do a basic fried mince onion and garlic salt and pepper and add cooked rice thats had mushrooms and chicken stock added and mix into cooked mince. cut tops of capsicums and deseed then fill with mince mixture and push down tightly and top with its lid. i ususally do 6 which is plenty for next day as well. i put in casserole dish so they fit snug standing up. then rub olive oil on them and bake till they are brown. when brown i add carefully a jar of tomato sauce and then back in the oven with alfoil on top till sauce heats up. i serve up with the red sauce and a stuffed green capsicum in the centre.

Boil up 500 grams mince, (no need to brown) with one chopped onion. Add salt and pepper to taste, 2 tablespoons tomato & Hot sauce.
Thicken with cornflour. Allow to cool.
Line pie tins with puff pastry, put a blob of mince mixture in (I do variations depending on who is eating them but my favourite is pepper pies or mushroom pies).
Top with puff pastry with a hole cut out (to let steam out).
Bake 180 degrees 3-40 mins.
Can top with mushy peas & mashed potato.

(PS We hosted Japanese students for many years and this was their favourite recipe!) :lol:

Zesty, this sounds like the way my Mum used to cook it and that is the way I remember it....I am going to cook it your way and see what happens. She also used to put boiled spuds in it and I used to love it on toast !!

Haha Dunco, I made this recipe up with the help of hubby who as a kid used to do some work in his grandfathers bakery in Brewarrina.
It also reminds me of the pies we used to get at the country town in Qld that I used to live. ;)

Oh by the way, I also add gravox (beef supreme) to add extra flavour - as well as a bit of cornflour or plain flour to thicken.

And yes, this was also my mum's savoury mince recipe that we used to have it on toast - loved it - but my kids cant stand it! :shock:

Hi ZESTY - You say that you "boil up the mince with onion and tomato sauce". Is that the only liquid you use?
Definitely a recipe we will try, especially with the added Gravox.

I usually put in a couple of cups of water and break up the mince by hand so it is nice and fine. :idea:
Also, as it is boiling, scoop off the white scum (yum) that floats to the top. :o

Hi... this is my favorite mince recipe. I mostly use Turkey mince, but any kind of mince works well.

Turkey Patties/rissoles/burgers

500g Turkey mince
Clove of garlic or teaspoon of minced garlic
2 spring onions, chopped
half cup of chopped semi-dried tomatoes
Baby spinach, (a big handful,) roughly chopped
100g feta cheese crumbled
1 egg

Mix altogether, make into pattie size that you prefer and roll lightly in breadcrumbs.
shallow fry in olive oil in frypan or cook on bbq.

My family love them, hope you will too!

I buy a few packets of good mince when it is on special (like last hour of shopping on Saturdays). We regularly do the Spag Bol and the Lasagne, but the quick favourite is homemade steakettes. My son bought me a hamburger meat patty press which I put Glad Bake in to make it easier to remove the steakettes. Now all I do is (500g mince at a time) put an onion, a slice of bread, a good squirt of Soya Sauce and a nob of fresh ginger (size a bit bigger than my thumb) in the food processor and mush it all up. Add the mince to the processor and let it do the messy mixing. Put mince mixture into the press and out comes good size steakettes. Having the Glad Bake on them makes them very easy to freeze for use later. We often experiment with other ingredients like chilli, bacon, or a garlic-cheesy centre. Once frozen, they can be cooked in the pan from frozen (they also hold together better) which can make tea at a later date so much easier. Forget the expensive piece of steak and sauce (and toothpicks) - flavoured steakettes don't need sauce (and much cheaper per kilo).

Not sure how I came by this recipe but it is always a popular dish.

Savoury Mince

Ingredients:
500g mince
1 large onion chopped
½ teas curry powder
½ cup water
1 pkt chicken noodle soup
2 tabs vinegar
½ cup tomato sauce
½ teas mustard
400g can crushed pineapple (drained)

Method:
Brown mince and onion in pan. Add all ingredients to pan including the pineapple JUICE but not the pineapple and simmer until cooked (approx 30 mins). Lastly add pineapple and serve.

I also add a pkt frozen mixed vegetables like peas, carrots, corn, beans etc
